{"id":14,"date":"2010-06-18T01:13:50","date_gmt":"2010-06-18T05:13:50","guid":{"rendered":"http:\/\/miancatalano.com\/?p=14"},"modified":"2011-06-27T22:46:25","modified_gmt":"2011-06-28T02:46:25","slug":"lettuce-pesto","status":"publish","type":"post","link":"https:\/\/miancatalano.com\/?p=14","title":{"rendered":"Lettuce &#8220;Pesto&#8221;"},"content":{"rendered":"<p style=\"text-align: left;\">It\u2019s prime time for lettuce and my refrigerator is overflowing with\u00a0fresh green leaves.\u00a0 I\u2019ve been making and eating many salads for lunch, but I\u2019ve recently created something different.\u00a0 Inspired by a recipe for a mild pesto using garlic scapes, I created an even lighter \u201cpesto\u201d made of lettuce.\u00a0 This is perfect for people who can not eat raw garlic and are looking for something new to\u00a0do with lettuce.\u00a0<\/p>\n<p><strong>Lettuce \u201cPesto\u201d<\/strong><\/p>\n<p>6 cups torn\u00a0lettuce\u00a0leaves<\/p>\n<p>\u00bd tsp. Garlic powder<\/p>\n<p>2 Tbsp. Pumpkin seeds<\/p>\n<p>2 Tbsp. Grated Pecorino Romano cheese<\/p>\n<p>\u00bd c. Extra-virgin olive oil<\/p>\n<p>Ground black pepper, to taste<\/p>\n<p>1.
