The tofu takes on classic Parmigiana flavors &#8212; a great way to introduce tofu to those who have never tried it.<\/p>\n<p>It&#8217;s a good idea to incorporate some tofu into your regular diet.\u00a0When\u00a0tofu is used to\u00a0replace\u00a0meat, it can\u00a0lower a person&#8217;s\u00a0total calorie,\u00a0fat,\u00a0and cholesterol\u00a0intake.\u00a0It&#8217;s also\u00a0a source of\u00a0calcium, phosphorus, iron, and vitamins A, D, E, and B12.<\/p>\n<p style=\"text-align: center;\">\n<figure id=\"attachment_323\" aria-describedby=\"caption-attachment-323\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2011\/05\/tofu-parm.jpg\"><img loading=\"lazy\" class=\"size-medium wp-image-323 \" title=\"tofu parm\" src=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2011\/05\/tofu-parm-300x218.jpg\" alt=\"\" width=\"300\" height=\"218\" srcset=\"https:\/\/miancatalano.com\/wp-content\/uploads\/2011\/05\/tofu-parm-300x218.jpg 300w, https:\/\/miancatalano.com\/wp-content\/uploads\/2011\/05\/tofu-parm-1023x744.jpg 1023w, https:\/\/miancatalano.com\/wp-content\/uploads\/2011\/05\/tofu-parm.jpg 1530w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-323\" class=\"wp-caption-text\">A winner in my Experimental Foods class!<\/figcaption><\/figure>\n<p><strong>Tofu Parm <\/strong><em>Serves 3<\/em><\/p>\n<p>1 lb. extra-firm\u00a0or firm tofu*, drained<\/p>\n<p>\u00bd tsp. powdered chicken bouillon (optional)<\/p>\n<p>\u00bc c. flour<\/p>\n<p>1 egg, lightly whisked<\/p>\n<p>\u00bd c. flavored breadcrumbs<\/p>\n<p>Canola oil, for frying<\/p>\n<p>\u00bd c. tomato sauce<\/p>\n<p>1 c. shredded part-skim mozzarella<\/p>\n<p>1.\u00a0\u00a0Cut tofu lengthwise into 6 slices and press extra moisture out of the\u00a0tofu slices with paper towel. Very lightly sprinkle powdered chicken bouillon over both sides of the tofu. Lightly coat tofu in flour, dip in egg, and coat in breadcrumbs.<\/p>\n<p>2. Heat pan with a small amount of oil. Fry tofu until golden brown on all sides, adding additional oil\u00a0as necessary.\u00a0<\/p>\n<p>3. Preheat broiler. Top tofu with sauce and mozzarella. Broil about 4 inches from the flame for 2 minutes.<\/p>\n<p>*I often use <strong>lite\u00a0firm tofu<\/strong>\u00a0to save on calories. Lite tofu has 40 calories, while extra-firm and firm\u00a0tofu have 70 and 80 calories, respectively.<\/p>\n<p style=\"text-align: left;\">I hope I\u2019ve gotten you curious about tofu.
