Rosemary Chickpeas and Bell Peppers is a dish that requires little prep time and cooks up in less than 20 minutes. It\u2019s a great vegetarian recipe that I usually enjoy with polenta or brown rice.<\/p>\n<p><a href=\"http:\/\/miancatalano.com\/?attachment_id=617\" rel=\"attachment wp-att-617\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-617\" alt=\"IMG_0614\" src=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2013\/02\/IMG_0614-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/miancatalano.com\/wp-content\/uploads\/2013\/02\/IMG_0614-300x225.jpg 300w, https:\/\/miancatalano.com\/wp-content\/uploads\/2013\/02\/IMG_0614-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Rosemary Chickpeas &amp; Bell Peppers<\/strong><\/p>\n<ul>\n<li><em>Serves 4<\/em><\/li>\n<\/ul>\n<p>1 Tbsp. plus 1 tsp. olive oil<\/p>\n<p>1 medium onion, small dice (3\/4 c.)<\/p>\n<p>1 rosemary sprig (about 7 in.)<\/p>\n<p>\u00bd tsp. kosher salt, divided<\/p>\n<p>3 garlic cloves, minced (1 Tbsp.)<\/p>\n<p>3 medium bell peppers, large dice (12 oz.)<\/p>\n<p>15.5 oz. can low sodium chickpeas, rinsed and drained<\/p>\n<p>2 Tbsp. dry white wine<\/p>\n<p>pepper, to taste<\/p>\n<p>Heat 1 Tbsp. olive oil in a large frying pan over medium heat. Add onion, rosemary sprig, and \u00bc tsp. kosher salt and cook for about 3 minutes. Mix in garlic and cook for 1 minute. Add peppers, chickpeas, and \u00bc tsp. kosher salt and cook covered for 5 minutes. Uncover and cook for an additional 6 minutes. Add white wine, scrape up brown bits from the bottom of the pan, and cook for 2 more minutes or until peppers are cooked. Add pepper to taste, adjust salt as needed, and drizzle with 1 tsp. olive oil before serving.<\/p>\n<p><strong>Note:\u00a0<\/strong>You may have heard that plant-based proteins (beans, nuts, seeds, bread, cereal, pasta, and rice), except for soy beans, are \u201cincomplete proteins\u201d.
