{"id":79,"date":"2010-08-01T17:42:26","date_gmt":"2010-08-01T21:42:26","guid":{"rendered":"http:\/\/miancatalano.com\/?p=79"},"modified":"2012-05-30T21:52:59","modified_gmt":"2012-05-31T01:52:59","slug":"filipino-chicken","status":"publish","type":"post","link":"https:\/\/miancatalano.com\/?p=79","title":{"rendered":"&#8220;Filipino Chicken&#8221;"},"content":{"rendered":"<p>I love to cook Filipino food, especially Chicken Adobo or as my friends call it\u00a0&#8211;\u00a0&#8220;Filipino Chicken&#8221;.\u00a0\u00a0It\u00a0fills the kitchen with a special aroma of garlic, Filipino soy sauce, and sugar cane vinegar.\u00a0\u00a0The sauce that the chicken cooks in is so flavorful that\u00a0one night, my\u00a0friend didn&#8217;t leave the table until he finished his meal and every last drop of sauce in the serving dish.<\/p>\n<p>Filipino soy sauce and sugar cane vinegar can be found in Asian supermarkets.\u00a0 If you\u00a0don&#8217;t have access to such\u00a0stores, try\u00a0using white vinegar and\u00a0soy sauce\u00a0that can be purchased at regular supermarkets.<\/p>\n<p><a href=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/Chicken-Adobo.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-80\" title=\"Chicken Adobo\" src=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/Chicken-Adobo-300x259.jpg\" alt=\"\" width=\"300\" height=\"259\" srcset=\"https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/Chicken-Adobo-300x259.jpg 300w, https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/Chicken-Adobo-1023x885.jpg 1023w, https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/Chicken-Adobo.jpg 1381w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>&#8220;Filipino Chicken&#8221; aka. Chicken Adobo<\/strong><\/p>\n<p>2 tbsp.\u00a0canola oil<\/p>\n<p>3\u00bd lbs. (about 14) chicken drumsticks, skins removed and moisture patted dry<\/p>\n<p>3 tbsp. finely chopped garlic<\/p>\n<p>\u00bd cup sugar cane vinegar<\/p>\n<p>\u00bc cup Filipino soy sauce<\/p>\n<p>1 dried bay leaf<\/p>\n<p>1 tsp. freshly cracked whole black peppercorns<\/p>\n<p>1. Heat the oil in a large skillet over medium-high heat.\u00a0 Add half the chicken and cook, turning occasionally, for 4 minutes or until light golden brown.\u00a0 When 1 minute is remaining, add the garlic. \u00a0Then, transfer the chicken and garlic to a plate.\u00a0 Repeat with the remaining chicken.<\/p>\n<p>2.
