{"id":95,"date":"2010-08-24T00:50:28","date_gmt":"2010-08-24T04:50:28","guid":{"rendered":"http:\/\/miancatalano.com\/?p=95"},"modified":"2010-09-22T10:36:03","modified_gmt":"2010-09-22T14:36:03","slug":"peach-cobbler","status":"publish","type":"post","link":"https:\/\/miancatalano.com\/?p=95","title":{"rendered":"Peach Cobbler"},"content":{"rendered":"<p>Peaches have been plentiful, so I&#8217;ve mostly been eating whole peaches as a snack.\u00a0 However, I&#8217;ve also topped my pancakes with them,\u00a0stirred them into my vanilla yogurt,\u00a0mixed them into my pesto pasta salads, and\u00a0added them to\u00a0my turkey burgers!\u00a0 Now, here\u2019s my recipe for a <em>not-too-sweet<\/em> Peach Cobbler.\u00a0 It\u2019s a great warm dessert made even more special with a scoop of vanilla ice cream on top. \u00a0<\/p>\n<p><strong><a href=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/IMG_3958.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-98\" title=\"IMG_3958\" src=\"http:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/IMG_3958-259x300.jpg\" alt=\"\" width=\"259\" height=\"300\" srcset=\"https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/IMG_3958-259x300.jpg 259w, https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/IMG_3958-887x1024.jpg 887w, https:\/\/miancatalano.com\/wp-content\/uploads\/2010\/08\/IMG_3958.jpg 1039w\" sizes=\"(max-width: 259px) 100vw, 259px\" \/><\/a><\/strong><\/p>\n<p><strong>Peach Cobbler<\/strong><\/p>\n<p><strong>Peaches:<\/strong><\/p>\n<p>2\u00a0lbs. &amp;\u00a04 oz. peaches, sliced\u00a0\u00a0<\/p>\n<p>1\/3 cup sugar<\/p>\n<p>\u00bd tsp. cinnamon<\/p>\n<p>\u00bc tsp. nutmeg<\/p>\n<p>2 Tbsp. cornstarch<\/p>\n<p>1 Tbsp.\u00a0water<\/p>\n<p><strong>Topping:<\/strong><\/p>\n<p>3\/4\u00a0cup all-purpose flour<\/p>\n<p>1\/4 cup sugar plus more for sprinkling<\/p>\n<p>\u00be tsp. baking powder<\/p>\n<p>\u00bc tsp. salt<\/p>\n<p>1\u00a0large egg, beaten<\/p>\n<p>2 Tbsp. canola oil<\/p>\n<p>1. Preheat oven to 400\u00b0F.\u00a0 In a large bowl, add the\u00a0peaches,\u00a0sugar, cinnamon, and nutmeg.\u00a0 In a small bowl, mix together cornstarch and water,\u00a0add mixture to the peaches, and\u00a0toss gently to\u00a0coat fruit evenly.\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>2. In a medium bowl, mix together the flour, sugar, baking powder, and salt.\u00a0\u00a0In a small bowl, mix the egg and oil.\u00a0 Using a rubber spatula, stir\u00a0the wet ingredients into the dry ingredients until\u00a0all moistened.\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>3.
